My favorite snack to order at Starbucks, morning or night, is their yummy Banana Nut Bread. However, with over 30g of sugar, I decided it was time to make a less sugar-filled treat - especially for when you’re on the go and don’t want such a fattening snack. I’ve learned that the best kind of goodies, and especialy natural goodies, can come sweetned in so many ways. From agave, coconut sugar, to cinnamon. Thats why this banana bread was already gone in a weekend... YUM!
What You Need:
3 bananas (smashed)
1/3 cup melted vegan butter
3/4 cup coconut brown sugar
1 egg beaten
2 tsp vanilla extract
1 tsp baking soda
1 1/2 cups flour
2 tsp cinnamon
1 tbsp agave
1/2 cup walnuts (chopped)
Cooking:
Preheat the oven to 350 F.
In a large bowl, mix butter into the mashed bananas, using wooden spoon. Mix in the sugar, egg, agave, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix just enough to blend the ingredients.
Add chopped walnuts & cinnamon to the batter and mix in to distribute evenly through the batter.
Butter a 4×8 inch loaf pan. Line the bottom of the pan with parchment paper, butter the parchment paper too. Pour the batter in the pan.
Bake for 45 min - 1 hour. Cool on a rack, then remove & enjoy!🍌🥜
