What’s PB, Chocolate, Yoghurt - but frozen all over? Frozen Yoghurt Peanut Butter Cups! 🥜
It’s burning up in El Paso, so finding new #dairyfree icy treats is my new hobby! Naturally, combining my favorite @enjoylifefoods chocolate chips and @so_delicious coconut milk yoghurt was the perfect combo.
What You Need:
(Chocolate Layer)
• 1 cup @enjoylifefoods chocolate chips
• 1 tbl. coconut oil
(Peanut Layer)
• 3/4 cup smooth peanut butter
• 1 tbl. coconut oil
• 1/2 tbl. agave
(Yoghurt Layer)
• 1 cup @so_delicious vanilla yoghurt
• 1 tbl. agave
Cooking:
1. Fill muffin tins with parchment cups. Combine chocolate chips & coconut oil and melt in microwave for 1 min, stopping halfway through to stir. Scoop 2 tbl. of chocolate into each muffin cup. Put tin in freezer for 1 hour.
2. When chocolate is frozen, take out. Combine peanut butter, coconut oil & agave and microwave for 25 seconds. Stir until fully combined. Spoon 1 - 2 tbl. into each muffin cup. Add tin into freezer for 1 hour.
3. When peanut layer is frozen, remove. Combine yoghurt & agave and stir until combined. Scoop 1 - 1 1/2 tbl. into muffin cup. Add tin into freezer for 2 hours.
4. Store PB cups in either freezer or serve immediately, enjoy!
