Sometimes, it can be hard to find a ‘healthy’ brownie recipe that holds all of the promises of no sugar AND tastes yummy... It also can be tricky when you want to enjoy dessert, but maybe feel a little guilty when you second guess yourself after a big meal - is this the best thing for me right now?
I sometimes struggle with this and that’s why I try to find new ways to combine genuinely GOOD ingredients within yummy treats. And big success, these just might be the best brownies I have every made! These fudgy goodies have NO eggs, NO dairy & NO white sugar! Truly them by the dozen or in an afternoon, no second guessing allowed!
What You Need:
1 large sweet potato (or 1 1/3 cup of sweet potato puree)
1/4 cup agave
1/3 coconut brown sugar
1 cup flour (all-purpose or coconut flour)
1/3 cup cocoa powder
1/4 cup melted coconut oil
1/3 cup vegan chocolate chips
Cooking:
If cooking your potato, steam for 15 min until soft - then peel all skins off & mash into potato purée or add into food processor. Make sure that puree is exactly 1 1/3 cups!
Preheat oven to 350 & line 8x8 baking pan with parchment paper (don’t forget to spray or add vegan butter - these get sticky!)
Mix the sweet potato, agave, coconut sugar, melted coconut oil, flour and cocoa powder together in a mixer at low/medium speed. Scrape the sides of the bowl down every few mixes.
Add chocolate chips and slowly mix or stir in.
Add mixture to baking pan (it will be semi-sticky) & bake for 35 min.
