Let’s start the week off right with a local-based, vegan stew to ease our bodies into the week with power. It consists of only 6 ingredients, all packed with antioxidants & veggie-nutrients!
One of the best ways to utilize aging or older produce in your fridge is by adding it into a stew! I utilized my older celery by chopping it up & adding it (and it tasted perfect!) Make the #sustainablechoice by using all your produce to the best of their lifespan😋🌿
What You Need:
3 cups vegetable broth (low sodium)
1 1/3 cups water (for broth)
4 cups water (noodles)
1/2 cup @aldentepastaco green pea noodles
1/3 cup lentils
2 1/2 stalks celery (chopped)
Cooking:
Take 4 cups of water & bring to boil in pot. Add veggie pasta & stir occasionally for 3-5 min until soft. Drain.
In same pot (now empty), pour in veggie broth & remaining water. Bring to low simmer & add in celery, lentils for 10 minutes.
After lentils have combined with broth & the celery has softened, add pasta noodles. Reduce heat to low for 3-5 min. Add pepper for seasoning.
Serve & enjoy🌿
