The Very Best Berry Oat Bars!

I love strawberry oatmeal bars, but not the extra sugar and additives that typically come added within it! These little bars are awesome snacks and took literally 20 minutes to make - just mix, bake & they’re ready! 🍓 The bars can be a bit crumbly when you’re cutting into them, as well as when your removing them from the pan, so pressing the final layer into the top is a big must. I also decided to mix in some coconut shavings into the top layer, but you can add walnuts or granola - any topping that would add a great bite to these easy and on the go bars!

 

What You Need:

  • 1/4 cup olive oil

  • 1 1/2 cup all-purpose flour

  • 1 1/2 cup quick oats

  • 1/3 cup agave or maple syrup

  • 1/3 cup brown coconut sugar

  • 1 tsp baking powder

  • 1/2 cup strawberry preserves

  • 1/2 cup unsweetened coconut shavings (for topping)

Cooking:

  1. Preheat oven to 350°F. Spray an 8×8 baking pan with non-stick spray.

  2. Mix all ingredients in mixer, except for preserves.

  3. Using your hands, press 2/3 of the mixture into the bottom of pan.

  4. Gently spread the jam.

  5. Crumble the remaining dry mixture and coconut shavings over the top of the jam and lightly press so the crumbles stay.

  6. Bake for 25-30 minutes on a center rack until golden. 🍓
