The entire month of May, I decided to challenge myself to a Vegetarian lifestyle. I had recently moved to El Paso and wanted to challenge my cooking skills and see whether living meat-free would improve my lactose intolerance. After one month, I can honestly say that I did experience less bloating, more energy, and a push towards meal prep on a daily basis. However, as far as sustainability goes, I personally think that it benefitted the money spent on groceries; yet, the downside was that one would have to visit the grocery store or farmer's market on a very frequent basis.
What do you think? Do you think that a vegetarian lifestyle or even a larger veggie increase into your personal diet could be sustainable for a month or even longer?
